THE APPLE
In recent years, the notion of
terroir or local produce has had a positive impact thus encouraging development. Risoul, as a purpose-built ski resort, needs ways of displaying its authentic Alpine roots.
A product like the local apple fits the bill.
This local variety of apple is extremely old and very acidic when picked, but because of this tartness keeps well and can be consumed up to the spring following harvest. It is a good cooking apple, perfect for jelly-making.
Orchards can be found up to 1300m and although not all are well-tended some farmers now make fruit juice from the Risoul apple. You can buy this juice direct from the farm and at local markets. Every autumn a day is dedicated to the apple with activities based around an apple-theme. There are workshops for children, an introduction to pruning and grafting the old varieties of apple, a meal featuring apples and lots of entertainment on offer.
